Watermelon Curry Recipe


4 cups seedless cubed watermelon

1 1/2 tbsp red chili powder

1/4teaspoon ground turmeric

1/2 tbsp ground coriander

1 tbsp minced fresh garlic

1/4 tbsp ground cumin

1/4 cup coconut milk

2 tbsp lime juice


Blend watermelon cubes, chili powder, turmeric coriander, garlic and cumin in a blender until smooth.

Simmer this puree in a large skillet for about 5 minutes.

Stir in coconut milk and lime juice and continue simmering for another minute.

Add the remaining watermelon cubes and about 3 mins simmer until hot.

Serve the watermelon curry with rice.
